
Our garden is doing great this year. A few weeks ago we enjoyed our much-anticipated, first tomatoes of the season!
Here is an easy lunch I look forward to every summer: Tomatoes stuffed with egg salad, using eggs from our own chickens. Yum! Easy and good for you! (you could also fill them with tuna salad instead of the eggs)
- Eggs
- Mayonnaise
- Tomatoes
- Salt & Pepper, if desired
Hard boil as many eggs as you need. Let cool and peel.
Mash the eggs with a potato masher or fork, and add mayonnaise, salt, pepper to taste.
Core tomatoes; slice from top to halfway through 4 times to make 8 flower-like petals.
Fill with egg salad.
Serve immediately.
Good for you, and so tasty with fresh garden tomatoes!
