Fresh Blueberry Crisp

Want a special July treat? I just finished making a fresh blueberry crisp!

We order blueberries from some Mennonites who travel up to New Jersey and bring back 10 and 20 lb. boxes of berries. Boy, are they tasty.

We LOVE Apple Crisp, so I thought I’d try a Blueberry Crisp tonight, and boy, it’s almost gone. Everyone’s had seconds!

Here’s how you make it…

  • 6 cups fresh berries
  • 1/2 cup sugar
  • 1 Tbsp. cornstarch
  • 1 tsp. lemon juice
  • 1/4 tsp. salt

Combine all the above in a 9″ x 9″ pan and stir.  Then cover with the topping.

Topping :

  • 1 1/2 cups flour
  • 1 1/2 cups rolled oats
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 12 Tbsp. butter
  • 1/3 cup brown sugar

Mix the topping up by hand, mixing the butter into the dry mixture.

Bake 1 hour at 350 degrees. Let cool 30 minutes before serving.

We put a scoop of vanilla ice cream on our warm crisp.

Mmm.. sooo good! Enjoy.
